Pastel de Choclo

FILLING
3-4 onions, thinly sliced
3 cloves minced garlic
1 lb ground beef
1 lb chicken, poached and sliced
Spices: salt, pepper, cumin, paprika

  1. Pan fry onions and garlic
  2. Add ground meat and spices, pan fry until cooked through

5 oz black olives
5 oz raisins, previously soaked in cold water
3 eggs, hardboiled, sliced

 

TOPPING
40 oz. frozen corn (or 8 cobs corn)
fresh basil
dash salt, black pepper
milk

  1. Blend ingredients together to a spreading consistency, a bit like mashed potato
  2. Pan cook/fry the mixture in a little oil without burning it, stirring for 5 minutes over medium heat.

ASSEMBLING
​1. ​In pan, put chicken, then olives and raisins, then filling, then egg, then corn puree
​2. ​Sprinkle a little sugar on top (to caramelize)
​3. ​Bake for 15 minutes at 400
4. Optionally broil for a couple minutes at the very end.​
